🔥 The Best Homemade Tandoori Paste
📌 Ingredients:
- 1 tbsp coriander seeds
- 1 ½ tbsp cumin seeds
- 6 black cardamom pods
- 10 whole cloves
- 2 tbsp Kashmiri chilli powder (adjust for heat level)
- 1 tbsp ground turmeric
- 2 tbsp ground cinnamon
- 1 tbsp salt
- 60g brown sugar
- 120g tomato paste
- 120g garlic paste
- 80g ginger paste
- 200g olive oil (+ extra for preserving)
🔥 How to Make Tandoori Paste:
- Toast the coriander seeds, cumin seeds, cardamom, and cloves in a dry pan for 1-2 minutes until fragrant.
- Let them cool slightly, then grind or blitz into a fine powder using a spice grinder or blender.
- Add the chilli powder, turmeric, cinnamon, and salt.
- Mix in the brown sugar, tomato paste, garlic paste, and ginger paste.
- Slowly drizzle in 200g olive oil, stirring until a thick, smooth paste forms.
- Transfer to a sterilised jar and cover the top with extra olive oil to preserve freshness.

🍃 Creamy Yogurt Dressing (The Perfect Tandoori Pairing!)
📌 Ingredients:
- 1 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tsp Honey
- 2 tbsp finely chopped fresh mint
- 1 garlic clove (minced)
- Salt to taste

- In a small bowl, combine Greek yogurt, lemon juice, honey, mint, and minced garlic.
- Mix well and season with salt to taste.
- Let it sit for at least 10 minutes to let the flavors blend.
