🔥 The Best Homemade Tandoori Paste

📌 Ingredients:

  • 1 tbsp coriander seeds
  • 1 ½ tbsp cumin seeds
  • 6 black cardamom pods
  • 10 whole cloves
  • 2 tbsp Kashmiri chilli powder (adjust for heat level)
  • 1 tbsp ground turmeric
  • 2 tbsp ground cinnamon
  • 1 tbsp salt
  • 60g brown sugar
  • 120g tomato paste
  • 120g garlic paste
  • 80g ginger paste
  • 200g olive oil (+ extra for preserving)

🔥 How to Make Tandoori Paste:

  1. Toast the coriander seeds, cumin seeds, cardamom, and cloves in a dry pan for 1-2 minutes until fragrant.
  2. Let them cool slightly, then grind or blitz into a fine powder using a spice grinder or blender.
  3. Add the chilli powder, turmeric, cinnamon, and salt.
  4. Mix in the brown sugar, tomato paste, garlic paste, and ginger paste.
  5. Slowly drizzle in 200g olive oil, stirring until a thick, smooth paste forms.
  6. Transfer to a sterilised jar and cover the top with extra olive oil to preserve freshness.

🍃 Creamy Yogurt Dressing (The Perfect Tandoori Pairing!)

📌 Ingredients:

  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp Honey
  • 2 tbsp finely chopped fresh mint
  • 1 garlic clove (minced)
  • Salt to taste

🥣 How to Make It:

  1. In a small bowl, combine Greek yogurt, lemon juice, honey, mint, and minced garlic.
  2. Mix well and season with salt to taste.
  3. Let it sit for at least 10 minutes to let the flavors blend.
